Appetizer | Jalapeño-Bacon-Wrapped Shrimp -or- Spanish Chorizo & Cream Cheese Stuffed Cremini Mushrooms
Soup or Salad | Cream of Roasted Bell Pepper -or- Fresh Strawberry Chocolate Salad w/ tucumcari mountain feta, toasted almonds, and pecan vinaigrette
Entrée | 12 oz. Hand-Cut Certified Angus Ribeye w/ red wine herb compound butter, roasted fingerling potatoes w/ garlic and parmesan cheese, and asparagus -or- 6 oz/ Pan-Seared Halibut w/ strawberry mango salsa and drizzled w/ mimosa vinaigrette, risotto, and haricots verts w/ red bell pepper and onion
